Getting a cat is part of a mission that you need to complete. Go to Northwic in England. Here you will find a cat in the street between two red posts. Get close and interact with it to trigger the mission. The cat is then going to run away and the owner is going to ask you to help him find the cat.
You then need to follow the owner until you find the cat. Interact with it again to catch it. This will recruit the cat and add it to your longship. Next time when you are on the longship you will find the white cat on the longboat with you.
